Red kidney beans contain lectins which act as a trypsin inhibitor. This results in overproduction of digestive enzymes and impaired absorption of food, causing vomiting and diarrhoea 2 to 4 hours after ingestion, recovery within a few hours.
The problems are avoided by boiling the beans for at least 10 minutes and then cooking until soft.
